Pimms Babas
There is only one drink you should think of when it gets to the summer, and that is Pimm's. I have made some babas flavoured with orange and lemon zest, and have soaked them in an orange, lemon and pimm's syrup, then topped them with a little orange flavoured double cream.
I think these are the best babas I have baked. The texture of the dough itself is perfect, being light and soft, and they are soaked in plenty of the boozy syrup making them moist and sticky. The flavours are light and quintessentially summery. These are an absolutely delicious dessert for a summer afternoon. No complaints from me.
