Sundried Tomato and Feta Clangers
This savoury bake is my version of a Bedfordshire clanger. Unlike the original it only features one filling rather than a sweet and savoury combination. The suet pastry is filled with chopped sundried tomatoes, chunks of feta and basil.
The pastry has a light yet rich texture, and offers a hardy casing for the filling. The mix of sundried tomatoes and feta is one that transports you to the Mediterranean and gives an unusual twist to the British classic.
