Onion Bagels



These bagels are filled with chopped onion and topped with black onion seeds.

I've had some interesting times with bagels over the years. I'm not sure I have yet mastered the hole making without knotting them together like I did last time hence I ended up losing some of the air out of these when they were proving. But ignoring that, they are almost perfect. They have the desired chewy crust (which made them quite difficult to slice!) and a subtle onion kick to give a delicious flavour and stop them from being too bland. The texture inside, despite the issues with making the holes, is just right. I think this was a near success, just I might stick to the knotting next time.
