Clotted Cream and Earl Grey Shortbreads



This bake skips the scone and jam, and marries the clotted cream straight with the tea. They are simple shortbread rounds made with earl grey and clotted cream.

The biscuits are perfectly baked, being crunchy and crumbly. There is an extra creaminess that makes them superior to the classic all-butter shortbread due to the clotted cream. I think I might use it a little more often when baking shortbread as it adds a touch of luxury. I would say these are a success and, perhaps served with strawberries and extra clotted cream, would definitely rival the classic cream tea.
