Almond Kouign Amann



You may remember the kouign amann technical challenge on The Great British Bake Off series 5, a bake with very few ingredients yet lots of confusion and places to go wrong. This is my second version of the French pastry, this time the danish pastry dough is filled with an amaretto almond frangipane paste and sprinkled with sugar.

The pastry is crisp and light, with the addition of the frangipane adding a contrasting texture and strong almond flavour. They may look a little dark but that is from the caramelisation of the sugar, making them richer, more indulgent, and adding a lovely sweetness. I may be biased due to my love of almond and frangipane, but I think these are an absolutely winner and definitely far better than the classic.
