Mojito Meringue Cupcakes
These cupcakes are flavoured with lime zest, filled with a lime and rum curd and topped with toasted swiss meringue.
The cake is light textured thanks to the addition of a little milk in place of some of the butter. The lime curd has a subtle kick of rum which resembles the classic cocktail and transports you to a Caribbean island in the sunshine. The meringue topping isn't too sweet so makes a lovely alternative to a buttercream frosting, letting the lime flavour remain strong.
