Coffee and Brazil Nut Biscotti



Biscotti are usually great accompaniments to coffee but as I don't drink the beverage I decided I would take the flavour and put it into the biscuit instead. These biscotti contain coffee extract and chunks of brazil nuts.

These biscuits definitely aren't for anyone with fragile teeth. They are crisp and crunchy, as you would expect from a biscotti. The flavour is almost there however I decided it was a good idea to add the coffee extract to the milk before pouring it into the dough and didn't end up needing all the liquid. The coffee could therefore be a little stronger. But other than that they are absolutely delicious and would be great as an evening snack after a big bowl of proper Italian pasta.
