Lemon Ricotta Cheesecake Domes



These domed desserts feature a whisked sponge base topped with a cream cheese and ricotta cheesecake mixture flavoured with lemon curd, and is drizzled with more homemade lemon curd.

This bake was not one I was particularly optimistic about working as my previous attempts to set things in my dome mould haven't completely worked, and I often have problems with cheesecakes. However, these came out perfectly. The cheesecake mix set well and had a strong lemony tang to it that is light and delicious. These desserts are very moreish and perfect for summer.
