Strawberry and Bailey's Creme Brulee

This was another chance for me to play with my blow torch. It is a Bailey's liqueur flavoured creme brulee, with a strawberry compote base and caramelised crunchy topping.

The custard baked to be perfectly smooth and creamy, with a subtle Bailey's flavour that adds an indulgent booziness. I was very pleased that the strawberry base didn't spread into the custard and stayed in the base, to give a lovely sweet flavour in each spoonful. The topping is crunchy and full of deep caramel flavour, elevating the dessert from fairly simple to delicious.
