Lemon and Blueberry Bread Pudding
This dessert is my twist on a classic bread pudding. The bread chunks are soaked in a milk, lemon zest and lemon curd mixture then baked with blueberries.
The lemon flavour is strong and tangy thanks to the lemon curd added.The blueberries are fresh and sweet, and taste delicious with the lemon flavour. It is baked to crisp on top yet possibly slightly too soft in the centre for the classic, yet is a lovely texture and makes a fantastic dessert.
