Mango, Thyme and Poppyseed Traycake



This is a simple traycake filled with chunks of mango, flavoured with fresh thyme and poppyseeds, and drizzled with water icing.

The cake is slightly denser than planned, potentially due to not using enough baking powder, but also because of the moistness of the mango. Nonetheless, it has a lovely texture, with a slight crunch from the poppyseeds. The thyme is subtle yet adds a delicious freshness to the sponge. I think it is a marriage made in heaven.
