Elderflower Palmier Sandwiches



I have baked some flaky pastry palmiers, dusted them with icing sugar, and sandwiched them with elderflower whipped cream.

The pastry is flaky yet most of the fat leaked out and all over my oven as it was too chunky when it was used. I think a simple rough puff would perhaps have been better. The cream is subtly flavoured with elderflower cordial, but could have taken a little more to emphasise the flavour. A few little modifications and the idea could become a perfect reality.
