Leek and Stilton Choux Puffs
I have been attempting my nemesis, choux pastry. These are choux puffs topped with breadcrumbs and filled with a creamy stilton and leek sauce.
I would say that the choux pastry puffed really well for once, and created a light open pastry case for the filling. It needed perhaps 5 minutes more to dry out in the oven, but once cut open this was rectified. The breadcrumb topping adds an extra crunch that adds to the lovely crisp texture of the pastry. The filling has a rich blue cheese flavour which tastes delicious with the leek. I may be bias as I am quite a fan of stilton, but I think this is a fantastic combination and great bake.
