Simnel Norfolk Scones
This year I haven't been baking a Simnel cake but instead decided to use the flavours and make a Norfolk scone round. Basically, this is two rounds of scone dough filled in the centre with a mixture of raisins, sultanas, currants and marzipan pieces, flavoured with mixed spice and lemon zest, and mixed with light brown sugar. The whole thing is topped with flaked almonds and cut into 11 pieces to reflect the disciples.
I wasn't sure whether this would work or if the fruit and sugar would just bubble out. But it turns out it worked perfectly. The scone is light with a soft texture and the filling full of Easter spiced flavour, with a lovely addition of the marzipan. This is a fairly simple bake but very effective.
