Lime Pannacotta Tarts



I have been baking some individual shortcrust pastry tarts filled with a lime pannacotta and decorated with lime zest.

The pastry is deliciously short, crunchy and crumble, and the filling has just the right amount of gelatine so it set well but remains smooth and creamy. I am a big fan of lime so I think these are delicious, and, as tarts go, can't really be beaten.
