Spiced Fig and Coffee Crumble Cake



This cake is flavoured with coffee extract and mixed spice, with two layers of figs and topped with a demerara and brown sugar streusel topping.

The cake is soft and light with a subtle coffee and spiced flavour. The crumble topping is crunchy and adds a delicious contrasting flavour. I think the fig flavour adds an extra depth and earthiness which is complemented wonderfully by the sponge. I would say this bake isn't too bad!
