Apricot and Pistachio Madeleines

These are some individual madeleines made of a pistachio sponge with a centre of apricot jam.

They are light and moist sponge with a delicious delicate pistachio flavour. The jam is sweet and adds a lovely fruity addition to the cakes. These are great little afternoon tea treats.
