Roasted Vegetable Hot Water Crust Pie

This is a hot water crust lattice topped pie filled with roasted pepper, red onion, courgette and potato, flavoured with basil.

The pastry on this was surprisingly light, crumbly and delicious, bearing in mind it was completely gluten free. The flavours were fantastic and I am very proud of the layers and look of the pie.
