Coffee, Raspberry and Hazelnut Croquembouche




This is my first attempt at a croquembouche which comprises of choux buns filled with coffee creme patisserie flavoured with toasted ground hazelnut and raspberry coulis. It is all stuck together and decorated with sugar.

The choux buns were almost spot on. I think a touch less egg and they would have been perfect. The creme patisserie is flavoursome with a coffee kick. I found it challenging to piece together the creation however, for a first ever attempt, I’m not too displeased.
