Rhubarb and Custard Ginger Cake
This is a sticky ginger and orange cake filled with a rhubarb jam and vanilla custard creme patisserie.
The cake was surprisingly light and airy, rising much more than I anticipated and perhaps wanted. Nonetheless it tastes fabulous with a strong ginger kick and orange aftertaste. The rhubarb caramelised to produce a great jam and the creme patisserie, mixed with a little margarine, had a light taste that complimented the other flavours well. I am very happy with this take on a traditional flavour combination.
