Coconut and Lime Meringue Pie

This is a meringue pie with a shortcrust pastry case, lime filling and coconut meringue topping.

The filling and meringue were both delicious and the pastry was short and crisp. I am very pleased with the look of the pie. The taste was almost perfect, just needing perhaps a sprinkle of sugar or a sweet pastry to elevate it from delicious to heavenly.
