Chocolate and Raspberry Baked Alaska

This is a baked alaska comprising of a raspberry sorbet, vanilla ice cream, chocolate sponge, raspberry jam and meringue coating.

This was a long awaited and very fun bake. I am surprised that it worked as well as it did. The flavours were great and worked together. The sponge was light and the ice cream soft. The only feedback, the meringue was too sweet. Next time, a couple of minutes longer in the oven (I can’t be trusted with a blow torch!!) and sharing it as there was too much meringue for one!
