Tutti Frutti Arctic Roll
This is a spring-time arctic roll. It is a lemon swiss roll sponge filled spread with a thin layer of apricot jam and filled with tutti frutti ice cream, which is flavoured with lemoncello, lemon zest and juice, and chopped mixed peel.
The sponge is light and delicate, although could have done with being about 1cm longer to prevent the slight mess I got in when enclosing the ice cream. I think a different tin should have been used. The ice cream has a lovely smooth texture as I made sure I regularly mixed it whilst it was freezing. The flavour is citrussy and fresh, and the whole thing is delicious.
