Orange Tarte Tatin



This is a tarte tatin with a chewy toffee topping, orange slices, a little star anise ad rough puff pastry.

This bake was a bit of an experiment as I didn't know what would happen to the orange slices. I was expecting them either to not soften and remain chewy and sour, or to completely disintegrate. However, it seems they cook to just soft and tender, but still offering a slightly tart citrus flavour. A large amount of the toffee topping ended up leaking out of the tin as I used a loose-bottomed one, but there was still plenty of sweetness left. The star anise is subtle and tastes warming and delicious with the orange slices. I am especially pleased with the puff of the pastry. It is light, crisp, flaky and was baked to perfection. This is a delicious dessert served warm with custard or cold with a dollop of creme fraiche or cream.
