Kent Lent Pie



A Kent Lent pie is a traditional bake from Folkestone, which is similar to a baked cheesecake in a tart, but usually involves the addition of ground rice. However, I thought I would take mine further and make it from pudding rice instead. So essentially this is my take on the classic, with a shortcrust pastry case, nutmeg spiced rice pudding filling and currants soaked in cointreau.

The pastry is short, crisp and has no soggy bottom. The filling is an unusual one to have inside a pastry case but I think it is delicious. It makes rice pudding a little naughty, with the alcohol soaked currants adding a lovely juicy fruity flavour. I think this is one of those unique creations that would either work or not, and I am very glad it did!
