Chocolate Mousse
A rich and indulgent chocolate mousse, with the depth of flavour brought out by a dash of sea salt. Just four ingredients and a little patience and you have a perfect dessert.
Recipe - Serves 4
- 140g dark chocolate (39% cocoa)
- 2 eggs, separated
- 100ml double cream
- Pinch salt
- Sea salt, to sprinkle
Break the chocolate into a bowl and place over a pan of simmering water. Add a large pinch of salt and stir to melted. Remove from the heat and leave for 10 minutes to cool. Stir in the egg yolks to combined.
Whip the cream to soft. Add one third to the chocolate mix and fold in to break down the mixture. Add the rest and fold in gently.
Whisk the egg whites to stiff and fold in one third. Add the rest and fold in lightly until no white pieces can be seen. Divide between four ramekin dishes, cover with clingfilm and chill overnight.
When set, remove the ramekins from the fridge and sprinkle a small amount of crushed sea salt on top to serve.
