Manchester Tart Doughnuts



Manchester tarts are traditionally little shortcrust pastry bakes filled with custard, raspberry jam, coconut and topped with a glace cherry. I have taken the main traditional flavours and put them into a doughnut. These are a sweet dough bun fried, dusted in icing sugar and filled with raspberry jam and a vanilla creme patisserie, then decorated with more jam and desiccated coconut.

I am very happy with the texture and bake of the doughnut. It is soft, light and pretty much perfect. The jam is sweet and full of raspberry flavour, and is delicious with the creamy custard filling. The final kick of coconut just elevates them to moreish and irresistible. I have to say, this has turned out to be a winning combination and taste delicious.
