Four Nut Filo Folds



These are baklava style filo bakes based on something I have seen sold at street markets. They are layers of homemade filo pastry, filled with chopped brazil nuts, almonds, walnuts and pistachios flavoured with allspice, and soaked in a sugar syrup.

The filo pastry flaked wonderfully creating deliciously light, buttery and flaky layers. The nut mix delivers an earthy flavour, and has the perfect level of subtle spice. The sugar syrup has little flavour but the added sweetness and stickiness makes these little filo bites that little bit more indulgent.
