Oaty Soda Bread Rolls
Buttermilk has to be one of the best things to come out of Ireland (other than potatoes!), so here's a recipe for some oaty soda bread rolls ready for St Patricks's Day.
Recipe - Makes 10
- 500g plain flour
- 60g oats
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 560 ml buttermilk
- Water, for brushing
- Oats, for sprinkling
Preheat the oven to 200C.
Mix the flour, oats, bicarbonate of soda and salt in a bowl. Add the buttermilk and stir to combine, forming a slightly sticky dough. Flour your hands and take about one tenth of the mixture. Roll it gently into a rough round and place on a lined baking tray. Repeat with the rest of the dough.
Moisten the tops of the rolls with a little water by brushing them, then sprinkle over some oats. Use a sharp knife to make two cuts through the top in perpendicular orientations to encourage them to expand.
Bake the rolls for 20-30 minutes, or until browned and they sound hollow when the bases are tapped. Remove and transfer to a wire rack to cool.
