Strawberry Milkshake Pink Wafers

One of my childhood favourite biscuits is a pink wafer. I have been longing to make my own, and have at last. These are some plain wafer layers filled with a strawberry milkshake buttercream.

The wafers are light and crisp with a lovely strong pink colour, although it is perhaps a little brighter than the Pink Panther classic. The buttercream has a delicious strawberry flavour and, together with the wafer, makes for a moreish biscuit that is the pure essence of nostalgia.
