Pineapple Meringue Sponge Pudding
This dessert is my take on a Queen of Puddings. It features a light muscovado sugar sponge base topped with slices of pineapple and meringue.
The sponge is light and soft with a rich and deep muscovado sugar flavour. The pineapple is wonderfully sweet and baked to release more juice than expected, which created a slight sauce as a middle layer. The meringue on top is crisp and crunchy yet soft in the centre. I wasn't quite sure if this was going to work as an idea, but I am very pleased that it turned out better than expected!
