Goat's Cheese and Lavender Welsh Cakes
I am celebrating St David's Day with some welsh cakes. These are a take on the traditional, being savoury and containing chunks of goat's cheese, a little honey and some crushed lavender flowers.
They are light in texture and have a strong goat's cheese flavour, which is complemented by the subtle lavender and slight sweetness. I have to be honest and say that this was not a bake without a problem. They coloured very quickly in the pan, either due to the cheese or the heat of the pan, and were originally undercooked. Once I cut one open and realised I have to pop them in the oven to ensure they were baked through. It seems they were so underbaked the baking powder was still active! However, once they were fully cooked they were pretty much perfect!
