Sherry Trifle Cake
This is a new take on a classic English Christmas Day dessert, a sherry trifle. It consists of a whisked sponge, vanilla crème mousseline, sherry and raspberry jelly, raspberries, flaked almonds and sponge fingers.
The cake is light and the flavours are delicious. The vanilla comes through strongly with an after hint of sherry and the sweet raspberries. The memories it invokes are glorious.
