Chocolate and Ginger Gateau St. Honore






This is a festive gateau St. Honore comprising of chocolate choux buns, ginger and vanilla creme patisserie, orange curd, chocolate icing and pistachio praline.

I am expanding my products of perfection this week, moving on from an uncracked swiss roll on Monday to some perfectly puffed choux. This is the best I have made the pastry and it was crisp and delicious. The flavours married well and it is full of festive charm.
