Week 5, Pastry Signature puff pastry




My signature puff pastry bake was a flaky pastry eccles cake. They are traditional north England goods made of light crispy pastry filled with a currant centre.

The flay pastry was my first eve attempt at anything other than shortcrust and it wasn’t too bad. It turns out that I was supposed to rotate my pastry by 90 degrees which would have enhanced the flake but despite this I’m not displeased with the result at all. They are still better than I expected.
