Week 5, Pastry Signature puff pastry




My signature puff pastry bake was a flaky pastry eccles cake. They are traditional north England goods made of light crispy pastry filled with a currant centre.

The flay pastry was my first eve attempt at anything other than shortcrust and it wasnā€™t too bad. It turns out that I was supposed to rotate my pastry by 90 degrees which would have enhanced the flake but despite this Iā€™m not displeased with the result at all. They are still better than I expected.
