Week 4, Traybakes Showstopper Layered Bake




The showstopper bake for this week was a coconut slice which features a shortcrust pastry base, blackcurrant jam and a light coconut top.

The pastry was the first time I have made shortcrust with trex rather than butter and it worked really well as it was a lot easier to rub in. The slice is fairly simple but the flavours are effective. A few adjustments could be made to the bake in the future but overall it wasn’t bad at all.
