Honey, Plum and Almond Tart
Today it was a pastry day. This is a tart comprised of almond pâte sucré with a honey glaze, crème pâtissière filling and topped with honey glazes plums.
This was the first time I tried a sweet shortcrust and the first time also for including ground almonds and I have to say, it worked very well. it was short and crumbly, but much more difficult to use than expected due to its very soft nature. The filling was a new recipe to try and was very good. Not quite perfect but so close. It requires a little more experiment I think to find the exact crème pâtissière consistency I am after. The flavours were great, I am very happy with its look and overall am very pleased indeed.
