Hazelnut and Raspberry Dacquouise.
Today was the turn for meringues once again with a dacqouise. This is three layers of hazelnut meringue sandwiched with raspberries and coffee custard. It is topped with a chocolate ganache and hazelnut praline.
The meringues turned out excellently, and so did the other elements too. Aside from an inability to count when I was decorating, I think it all came together beautifully. And, even more importantly it was delicious! The only improvement, chocolate is an acquired taste as an addition to the top.
