The last of my Easter bakes was a Simnel Cake. This is a moist fruit cake with a layer of marzipan in the centre and a layer on top. It is decorated with eleven balls of marzipan representing eleven of the disciples. It is then grilled to give a golden brown finish.
The cake turned out fruity and light and the centre marzipan was gooey and toffee-like. I am pleased with the appearance and the browning of the top.
