Date and Ginger Sticky Toffee Pudding

My mother’s day dessert was a sponge made with dates and delicately spiced with stem ginger, topped with a sticky toffee sauce. The sponge turned out surprisingly light and with an excellent taste. The flavours were subtle but effective. The toffee was sticky and sweet and complimented the sponge well.
