Week 6, Puddings Signature Pie
This week’s signature bake is a lemon meringue pie. It is a shortcrust pastry base topped with a very lemony filling and a soft meringue with a crispy top.
I think this went very well once I had patched up my pastry and decided that baking the filling was a good idea. Aside from a gradual lemony leakage once the meringue had been baked, it was fantastic. I think the flavour and general bake overrides that easily!
