Week 2, Sweet Dough Technical Bake

My technical bake this week was brioche.

I would say that this week was the biggest learning week so far as I admit, I did require two attempts. I have begun to properly understand the effects of dough proving. I am glad I tried again as I think the Brioche a Tete look pretty good. I am very happy with them.
