Amaretto Oat and Raisin Cookies
These cookies are my version of an oat and raisin cookie, with the raisins soaked in amaretto.
Baking these were a bit of a quick decision and improvisation based on my chocolate chip cookie recipe. I think soaking the raisins in amaretto was a great idea as it gives them an unexpected yet delicious flavour. They are, of course, slightly crisp on the outside and soft and chewy in the middle, just as a perfect cookie should be. It was interesting to compare them with the chocolate chip ones I baked at the same time as they didn't spread quite so much. Clearly the oats helped them keep a more plump shape. Either that or I forgot to add an ingredient (which wouldn't be unusual!).
