Pumpkin Spice Biscuits with Maple Icing

These biscuits are a simple bake that combines pumpkin spice with earthy maple syrup to provide a wonderful autumnal flavour combination.

Recipe - Makes 12

For the biscuits:

  • 60g butter
  • 45g light brown sugar
  • 80g plain flour
  • 1 tsp ground cinnamon
  • 1/3 tsp ground ginger
  • 1/6 tsp ground nutmeg
  • 1/6 tsp ground allspice
  • Pinch ground cloves

For the icing:

  • 50g icing sugar
  • 2 tsp maple syrup
  • 1 tbsp water

Make the biscuit dough by creaming the butter and sugar together to light and fluffy. Add the flour and spices and mix to form a dough. Transfer to a lightly floured board or place between two pieces of cling film and roll out to 5mm thick. Use a leaf shaped cutter to cut out the biscuits and place well apart on a lined baking tray. Chill for 20 minutes in the fridge whilst you preheat the oven to 180C. Remove the biscuits from the fridge and bake for 12 minutes. Leave on the tray for 3 minutes before transferring onto a wire rack to cool completely.

Make the icing by mixing the maple syrup and icing sugar together and add enough water to make a pipeable icing. Transfer to a piping bag fitted with an icing nozzle and drizzle over the biscuits. Leave to set before eating.
