Courgette and Goat's Cheese Quiche
This is the first of two bakes for my mum's annual trip to Ascot. It is a goat's cheese quiche mixture with courgette roses, encased in a walnut pastry.
The pastry is crumbly and nutty, and there was no soggy bottom in sight (ignoring the slight patch of pastry that got stuck on the base of the tin!). The plan was to make one large courgette rose but it ended up being far too courgette-heavy, so I created a bunch of roses instead. This gave a better balance of vegetable and quiche mixture, and looks equally, if not more, elegant.
